Whole Wheat Veggie Pizza from scratch!

Ok lets face it! Its Friday... finally! i am sure all of you would have had a busy week and looking forward for the weekend relaxation. What better way to start the relaxation, then the home made pizza ! Yup the pizza dough is made from scratch and another plus is that I have used whole wheat flour. So lesser calories and more nutrition.
I love home made pizza. Reason is that it is so fresh, and you can customize the pizza to your liking with your favorite toppings.
So lets get to the recipe!
P.S - Sorry for the not so good pics. Family was hungry and no time to professionally set up and click pics :(

Serves 4- makes two 8 inch pizza
Ingredients Required:
For the dough:
Whole Wheat Flour - 1.5 cups
All Purpose Flour - 1/2 cup
Instant Yeast - 1 packet
Sugar - 1.5 tsp
Salt - 3/4 tsp
Very Warm water - 3/4 cup + 1/4 cup (as needed)
Olive Oil - 3 tblsp

Pizza Sauce - 1/4 cup
Olive oil - 2 tblsp
Salt and Pepper - to taste

Toppings:(Roughly chopped)
Bell Peppers - (any or all colors)
Onion
Garlic, minced
Corn
Olives
Jalepenos
Banana Peppers
Pineapple
Grated Mozzerella Cheese - 1 cup

How to make:
Dough:
Combine 1/2 cup all purpose flour,  yeast, sugar, and salt in a bowl.
Add 3/4 cup water and oil. Mix until well blended.
Add the remaining flour gradually and mix till a soft dough ball is formed. If required slowly add some more water.
Knead well on a floured surface for about 5 minutes until smooth and elastic. Roll into a ball and set inside closed container in a warm place for 2 hours.
After 2 hours: The dough would have doubled in size.

Preheat oven to 425F, with the pizza stone or baking sheet in the oven.
Divide the dough into 2. Roll them out into thin base, as much thickness as required by you.
Remove the pizza stone/baking sheet from the oven.
Transfer the base onto the sheet.
Prick some holes so it does not puff up on baking.
Brush some olive oil, so it does not become soggy.
Add 2 tblsp of pizza sauce and spread.
Add the toppings. Add the cheese.
Sprinkle some salt/pepper if desired.
Place in the oven and bake for 12 - 15 minutes, till the cheese is bubbly and the crust is brown.
Remove. Slice and Serve.

Notes:
I have used only a baking sheet for making the pizza. It comes out perfect each time.
When transferring the base to the baking sheet, place the rolling pin on the edge of the base and roll the dough base onto the rolling pin. Transfer to the baking sheet and unroll.
I have just given a list of basic toppings. Be free to be creative to your liking.
You can also add dollops of cream cheese before baking for a more creamier topping!

  1. If I need to prepare only one 8inch pizza, then do I need to use only half packet of yeast?
