Granola (Stovetop Method)

I just love having Granola for breakfast. Actually I am not a big fan of oats, but Granola is an exception. Granola is nothing but toasted oats with a flavor of honey and sugar along with dry fruits and nuts of our choice.
I usually buy them from the store, but then I thought why not try making it at home as we have the choice of adding in our favorite ingredients :)
I thought it would be difficult to make, but it is very easy and tasty indeed.
This can be made stove top and in the oven. I made it stove top.



Ingredients Required:
Oats (Rolled/Quick Cooking) - 3 cups
Honey - 3 tblsp
Brown Sugar - 1/4 cup
Cinnamon - 1 tsp
Oil - 2 tblsp
Butter - 1 tblsp
Raisins - 1/4 cup
Chopped Dates - 1/4 cup
Almonds - 1/4 cup, chopped
Cranberries - 1/4 cup

How to make?
In a large skillet, dry roast the oats till light brown in color and till it becomes crisp.
Set it aside on a plate.
In the same skillet, heat the oil and butter. Add in the honey and brown sugar.
When the mixture comes to a boil, add the cinnamon and mix well.
Add in the oats, raisins, almonds, dates, cranberries and give a good mix.
Spread them out on a cookie sheet or a large plate and let it cool for 1 hour.
The mixture would be sticky right out of the stove but on cooling it becomes crisp.
Crumble a little with your fingers to break the clumps. If you prefer to have few clumps then you have granola clusters :)
Store in air tight container.
Notes:
You can add in any dry fruits and nuts of your choice.
Toasted coconut flakes can also be added.
The original recipe called for old fashioned rolled oats, but I used quick cooking oats and was satisfied with the result. 

This makes a great breakfast when had with milk, or can also be had as a topping with yogurt or ice cream. It also tastes great as it is as a snack.
