Salt/Uppu/Ulundhu Kozhukattai

Makes around 20

Ingredients Required:
For the outer cover:
Rice Flour - 2 cups
Salt - pinch
Oil - 1 tsp

How to make?
Sieve the rice flour and mix salt. Set aside
Heat water in a vessel, and slowly pour it over the rice flour and mix it with a spoon in one hand.
Set aside for few minutes till it becomes warm and knead into a soft pliable dough like the chappathi dough. Apply some oil over the top and cover it and set aside.

For the filling:
Channa dhal - 1/4 cup
Urad dhal - 1/2
Green chilli - 3
Salt as required
Coconut - 2 tsp
Mustard Seeds - 1 tsp
Hing - pinch
Lemon Juice - 2 tsp

How to make?
Soak both the dhals together for 1 hour.
Grind the green chilli in a blender, and then add the dhal and coarsely grind them. Do not grind them to a paste. Try not to add water, if required add very little.
Add salt and hing to the mixture and mix well.
Make small balls out of the mixture and steam cook them in a steamer or idly plate for 10 minutes.
Heat some oil in a pan, and allow to splutter. Crumble the balls and add the crumbled mixture to the pan.
Mix well with the oil, till the mixture is dry.
Add coconut, stir for few seconds and then turn of the stove.
Add the lemon juice and give a final mix.

How to make the Kozhukattai?
Now divide the outer layer dough to 18 - 20 small lemon size balls.
Apply some oil in your fingertips and take a ball of dough.
Take a Ziploc bag and cut the sides such that it is joint only at the bottom.
Place a ball of dough on on side of the bag, close it with the other side.
Take a plate, and keep it on top of the ball and press. The ball would have formed a thin disc.
Place a spoonful of filling on one half of the dough, and cover it with the other half, such that it forms a semi circle.
Now again close it with the ziploc bag, take a fork and gently press the opening of the kozhukattai so it is sealed. Gently peel of the kozhukattai and set aside.
It is better to place it on top of another ziploc bag so it is easy to remove even if it sticks.
Do this for all the other dough.
Steam cook this in a steamer or idly plate for 10 minutes until you get a glassy outer surface.
If you have any filling left just make it into balls and steam cook them and serve.
Serve Hot!
