Moist Banana Bread

Moist Banana Bread! Now doesn't that sound mouth watering? Yup.. it sure was delicious and made a great tea time snack :)
I had some ripen bananas sitting in my fruit basket which were almost black in color and was in a state to be thrown away, I was about to throw them when the thought of banana bread struck me. I had read some where more ripen the banana's more moist the bread. And it sure was right... I have also given few variations that can be done with this recipe that I have tried. Ok now lets get to the recipe.


Makes 1 loaf (8 inch X 4 inch)
Ingredients Required:
All purpose flour - 1 cup
Brown Sugar - 1/2 cup + 2 tsp
Salt - pinch
Ripen Bananas - 2
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Oil - 2 tblspn
Curd - 2 tblspn
Vanilla essence - 1 tsp
Milk - 1/4 cup
Cinnamon - 1/2 tsp
Cardamon - pinch


How to make?
Mash the bananas to a nice paste and set aside.
In a bowl,add the sugar, oil, curd and milk. Mix well.
In another mixing bowl, add the all purpose flour, baking powder, baking soda, cinnamon, cardamon, salt and mix.
Add the wet ingredients, mashed banana and the vanilla essence to the flour mixture.
Give a nice whisk so all the ingredients blend in together.
It should be of cake batter consistency.
Butter the bread pan and dust with flour.
Pour this in the bread pan and place in a preheated oven of temperature 350 F for 45 - 50 minutes.
I like my bread to have a crisp brown crust so keep it for an extra couple of minutes.
Insert a fork in the middle of the bread and if it comes out clean then your bread is ready!

Cool the bread in the pan for 5 minutes, then cool on a plate/wire rack for 30 minutes.
Slice and enjoy!



Variations:
1. White Sugar can be used instead of brown sugar. Brown Sugar just makes the bread more soft and fluffier.
2. Increase the oil to 1/4 cup and add 3 tblspn of flax milk. Skip the milk. This would also yield softer bread.
3. Walnuts and Raisins can be added to the bread. I did not have any on hand and hence skipped the step.
