Mixed Vegetable Sandwich



Makes 5 Sandwiches
Ingredients Required:
Whole Wheat/White Bread - 10 slices
Butter - 1 tbsp


For the Filling:
Potato - 2,
Carrot - 1, peeled, chopped
Beans - 10, chopped
Peas - 1/4 cup
Cilantro - few springs
Salt to taste
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp
Coriander Powder - 1 tsp
Oil


How to make?
Boil the potatoes, peel and mash them. Set aside.
Boil the carrot, beans and peas till tender.
Heat oil in a pan, add little oil.
Add the mashed potatoes, boiled vegetables, salt, turmeric powder, coriander powder, chilli powder and give a good mix.
Add the chopped cilantro and set aside.
Heat the Sandwich Maker. Drop a piece of butter on the base of the sandwich maker and allow to melt.
Place a slice of bread, scoop out a spoonful of filling on the bread. Place another slice of bread on top and drop a piece of butter on the bread.
Close the sandwich maker and allow to cook.
Once the light goes off, remove the sandwich and serve hot with ketchup!
