Sweet Corn Vegetable Soup

It was kind of cold outside and I felt like having something hot! I remembered that I had just bought some sweet corn.. So tried out making Sweet Corn Vegetable and it came out deliciously well! Shrini liked it a lot and said we should make this at least once a week :) I have been thinking that I have not tried out different types of soups and I am going to start doing that! It would healthy and tasty as well!

Serves 2
Ingredients Required:
Sweet Corn Kernel - 2 Cups
Corn Flour - 2 tbsp
Carrot - 1, diced to small pieces
Beans - 5, chopped
Peas - less than 1/4 cup
Cabbage - 3/4 cup, shredded
Pepper - as per your taste
Salt to taste
How to make?
Cook the sweet corn kernel in 1 1/4 cup of water till it is cooked and set aside to cool.
Boil all the vegetables in 1 1/4 cup of water with salt and once cooked set aside.
Set aside 1/4 cup of the cooked corn and blend the rest with the same water to a paste.
Use a strainer and a vessel to collect the sweet corn puree.
Mix corn flour with little water and set aside.
In a pan, add the corn puree, boiled vegetables, corn and heat on low.
Add the corn flour mixture, salt and pepper as required.
Remove from heat, garnish with chopped cilantro and serve hot.
We had the soup with masala papad and it tasted great!
