Spinach Rice

Usually every week during our routine vegetable shopping I make it a point to get a fresh bunch of Spinach, as it is healthy :) And I usually end up making Spinach Paratha, Spinach curry or the Spinach Kootu. But this week I wanted to try something else with it as I was bored with the other dishes and made Spinach Rice! Wow, it was more delicious than I thought :) Think I will make this a routine lunch box menu till we get bored of it ;)

Serves 2

Ingredients Required:
Rice - 1 Cup
Spinach - 1 Bunch
Red Chilli - 4
Coriander Powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt to taste
Cumin Seeds - 1 tsp
Channa Dhal - 1 tsp
Urad Dhal - 1 tsp
Oil

How to make?
Pressure cook the rice with 1 1/2 cup of water and set aside.
Wash and chop the spinach into small pieces and set aside.
Heat oil in a pan, add the cumin seeds and red chillies, channa dhal, urad dhal and fry till golden in color, add the spinach.
Add the coriander powder, turmeric powder, salt and let it cook on low flame for 5 to 10 minutes.
Close the pan, and stir once in few minutes till the quantity of the spinach is reduced to 1/4th of the original.
Mix this with the rice, and fold gently as not to break the rice.
Taste a little and add more salt if required.
Serve with Curd.
