Lemon Rasam/Sathamadhu


Serves 2

Ingredients Required:
Tamrind - lemon sized
Rasam powder - 1 tblsp
Salt to taste
Cilatro - few springs
Curry leaves - few
Tomato - 1 chopped
Toor Dhal - less than 1/4 cup
Lemon Juice - Juice of 1 lemon/ 2 tblsp

To season:
Mustard seeds - 1 tsp
Red chilly - 2
Oil

How to make?
Pressure cook the toor dhal and set aside.
Microwave the tamrind with one cup of water for 2 minutes.
Allow to cool and extract the water.
Boil the water in a vessel, add the chopped tomato, rasam powder.
Allow to boil for few minutes and froth would form on top.
Add 1 cup of water to the dhal and mix well and add this to the rasam.
In a small pan heat oil, add the mustard seeds and allow to splutter and add this to the rasam.
When the rasam is boiling, switch off the stove.
Add the lemon juice, and garnish with cilantro and curry leaves.
Serve hot with rice.
