Kathirikai Milagau Kootu (Brinjal Pepper Kootu)



Serves - 2
Ingredients Required:
Brinjal - 5-6, chopped
Moong Dhal - 1/4 cup
Salt to taste
Mustard Seeds - 1 tsp
Urad Dhal  - 1 tsp
Oil
Peppercorn - 1 tsp
Cumin Seeds - 1 tsp
Grated Coconut - 2 tblsp


How to make?
Pressure cook the brinjal and dhal along with salt and turmeric powder and allow to cook for 5-6 whistles.
Grind coconut, cumin seeds, and peppercorn with little water into a paste and set aside.
In a pan, heat little oil and add mustard seeds and allow to splutter. Add urad dhal and fry till golden in color.
To this, add the cooked brinjal and dhal and mix well.
Add the coconut paste to the kootu and allow to cook for a minute.
Add salt if required.
Serve hot with rice or roti.


Tip:
The mustard seeds and urad dhal can be fried in ghee for better flavor.
