Guacamole Bean Burrito
Makes - 6
For the Tortilla:
All purpose flour - 1 Cup
Wheat Flour 1 Cup
Baking Powder - 1 tsp
Salt as required
Milk - 3/4 Cup
For the filling:
Mexican Beans - 1 cup
Rajma/Kidney Beans - 10
Salt to taste
Guacamole - 1 cup (How to make Guacamole?)
How to make?
In a mixing bowl, mix all the dry ingredients together.
Add luke warm milk slowly and mix to a soft dough.
Knead the dough for few minutes.
Cover the bowl with a damp cloth and set aside for an hour.
Soak both the beans for 4 hours.
Pressure cook in 4 cups of water for 15 minutes with salt.
Mash the beans and set aside.
Divide the dough into 6 equal balls.
Roll out into thin circles.
Heat a pan on medium heat.
Place the tortilla on the pan when it is hot. Bubbles would start appearing in 20 seconds, turn the tortilla and cook the other side for 20 seconds.
Remove from pan when light brown spots appear on the surface.
Place the mashed beans and guacamole.
Sprinkle some chilli sauce.
Roll the tortillas like burritos and serve hot.
Sour Cream or cheese may also be added along with the filling. Microwave for 10 seconds so the cheese melts and then serve.
