Carrot Malai

This is very similar to carrot kheer and is very easy and faster to make. I just tried this out couple of days back for dessert, as we had a guest and everyone loved it :) It has a very inviting color and aroma.... and less fattening then the carrot kheer as we do not use ghee in this.


Serves 4
Ingredients Required:
Peeled Baby carrot - 1 lb
Milk - 4 cups
Sugar - 1 cup
cardamom -  1 tsp
Badam - 10
Cashews - 10


How to make?
Pressure cook the carrots and set aside to cool.
Boil the milk on low heat so it reduces to 3/4th of its quantity. Stir often and make sure that the bottom is not burned.
Cool the milk and set aside.
Soak the badam and cashews in water for 30 minutes so they become soft and easy to grind.
After the carrot and milk have cooled down, in a blender add the carrot, milk, sugar, badam, cashews and cardamon.
Blend for few minutes till all have blended together.
Serve chilled!


Tips:
I like blending the badam and cashews along with the milk. You can also chop them into slices and fry them in ghee and garnish your dish with them in the last.
