Spinach (Keerai) Curry



Serves 2
Ingredients Required:
Fresh spinach - 1 bunch, washed and chopped
Urad dhal - 1 tsp
Cumin Seeds - 1 tsp
Mustard seeds - 1 tsp
Red Chillies - 6
Salt to taste
Greated coconut - 1 tbl. spn


How to make?
Heat little oil in a pan, and add urad dhal, cumin seeds, red chillies and mustard seeds.
Fry for few minutes till the mustard seeds splutter and add the spinach and mix well.
Add 1/4 cup of water and salt. Close the pan and allow to cook for 5 minutes on low heat.
Make sure that the spinach is cooked well and all the water has evaporated.
The spinach would have cooked and reduced to 1/4th the original quantity.
Add the grated coconut, fry for few seconds and serve hot.
