Potato Podimas (Iyengar Style)

Potato Podimas is a popular dish in South India where the Potato is mashed and blended with spices.


Serves 2
Ingredients required:
Medium Size Potato - 4 nos
Ginger Paste - 1 tsp
Green Chilli - 2, chopped
Salt to taste
Turmeric powder - 1/4 tsp
Hing - Pinch
Cilantro - few springs
Mustard Seeds - 1 tsp
Black Gram Dhal - 1 tsp
Channa Dhal - 1 tsp
Oil
Lemon Juice - 1 tblsp


How to make?
Boil the potatoes and peel the skin and mash them with a masher.
Heat little oil in a pan and add mustard seeds and allow to splutter. Add the the black gram dhal, channa dhal, ginger paste, hing, chopped green chilli and fry for few minutes.
Add the mashed potato, salt, cilantro and turmeric powder. Mix well and heat on low for few minutes.
Switch off the stove and add the lemon juice. 
Mix well and stir.
