Onion Sambhar

Serves 2
Ingredients Required:
Toor Dhal - 1/4 Cup
Turmeric Powder - 1/2 tsp
Oil - 3 tsp
Mustard Seeds - 1/2 tsp
Onion - 1, Chopped lengthwise
Green Chilli - 4
Curry Leaves - few twigs
Tomato -1 , Chopped
Tamrind - Lemon size
Sugar - 1 tsp

To Fry and Grind:
Red Chilli - 6
Channa Dhal - 1 tsp
Fenugreek Seeds - 1 tsp
Coriander Seeds - 3 tsp
Cumin Seeds - 1/2 tsp
Raw Rice - 1 tsp
Grated coconut - 1 tbl sp

How to make?
Pressure cook dhal in a pressure cooker and set aside.
Heat little oil in a pan and add the ingredients under the 'fry and grind' and fry for few minutes and grind them with little water to a smooth paste and set aside.
Heat little more oil in the same pan and add mustard seeds, and allow to splutter.
Add the chopped onion and fry till the golden brown and then add the tomatoes, green chillies and fry till the raw smell goes.
Microwave the tamrind with 1 and 1/2 cup of water for 2 minutes.
Add the tamrind water, salt, turmeric powder and sugar. Allow to boil for few minutes.
Add the ground paste to the sambhar and mix well.
Blend the cooked dhal in the blender for a second so it is mashed and add to the sambhar and allow to boil on low heat for 10 minutes so the flavor blends in.
Garnish with chopped cilantro leaves.
Serve hot with rice. Also makes a good side dish for Idly and Dosa.


Tip:
Other vegetables like capsicum, raddish, pumpkin, drum stick etc can also be added to the sambhar.
