More Kuzhambu (Iyengar Style)

Serves 2
Ingredients Required:
Vegetable (Pumpkin or Okra or Brinjal)
Beaten Curd -1 1/2 Cup
Coriander Seeds - 1 tsp
Channa Dhal - 1 tbsp
Red Chilly - 5
Coconut - 3 tbsp
Fenugreek Seed - 1/2 tsp
Thoor Dhal - 3 tbsp

Turmeric Powder - 1 tsp
Mustard Seeds - 1 tsp
Curry leaves - few

How to make?
Soak the thoor dhal in water for 20 minutes.
If using pumpkin or Brinjal, chop it and boil the chopped pieces in water, salt and turmeric powder till the vegetable is cooked.
If using okra, chop it into long pieces and deep fry in oil and set aside.
Fry the coriander seeds, channa dhal, coconut, fenugreek seeds in little oil and grind into paste with the soaked thoor dhal.
Take the beaten curd and dilute it with 1/2 cup water and mix the ground paste. Add salt and turmeric powder to the curd and heat on low flame till the raw smell goes away.
Add the vegetable and temper with mustard seeds, red chillies and curry leaves.
Serve hot with rice.
