Kothamalli (Cilantro) Rice



Ingredients Required:
Rice - 1 Cup

Oil
Salt to taste

To Grind:
Cilantro - 1 bunch
Channa Dhal - 2 tsp
Urad Dhal - 2 tsp
Green Chilli - 2, chopped


To Season:
Urad Dhal - 1 tsp
Channa Dhal - 1 tsp
Cashews - few, broken
Red Chillies - 3




How to make?
Cook the rice in a pressure cooker and set aside.
Heat little oil in a pan and fry the channa dhal, urad dhal till golden brown. Add the green chilli and cilantro and fry for few minutes till the raw smell goes.
Grind the above to a coarse paste. If required add 1 tsp of water and grind.
Heat oil/ghee and fry urad dhal, channa dhal, cashews and red chillies for seasoning.
Cool the rice in a plate and add the ground paste. Mix without breaking the rice. Add salt as required.
Add the seasoning to the rice, mix and serve with curd or raita.
