Kathirikai Podi Karamadhu (Iyengar Style)

Serves 2
Ingredients Required:
Brinjals - 15 - 20
Mustard seeds - 1 tsp
Salt to taste
Oil as required

To roast and grind:
Red chillies - 8
Coriander seeds - 2 tbl.sp
Pepper - 2 tbl.sp
Channa dhal - 3 tbl.sp
Coconut - 2 tbl.sp
Salt to taste

How to make?
Cut the brinjal lengthwise and immerse them in water with a pinch of salt.
Heat little oil in a pan and add all the ingredients under the 'roast and grind'.
Roast till they become golden brown in color.
Cool them and grind into a coarse powder and set aside.
Heat little oil in the same pan and add mustard seeds, allow to splutter.
Add the chopped brinjals and the coarse ground powder.
Add little salt and sprinkle little water on top.
Close the pan and allow to cook on low heat for 10 minutes until the brinjal is cooked.
Open the pan few times and mix well so it does not get burnt.
Serve hot.
