Coconut Rice

Serves 2
Ingredients Required:
Rice - 1 Cup
Grated Coconut - 1/2 Cup
Salt to taste

For seasoning:
Mustard Seeds - 1 tsp
Urad Dhal - 1 tsp
Channa Dhal - 1 tsp
Red Chilli - 5
Curry leaves - few
Peanuts - 10
Cashenuts - 10, broken

How to make?
Pressure cook the rice, with 1 and 1/2 cups water. After the rice is cooked, spread the rice out on a plate so it cools down and does not stick.
Heat oil in a pan, fry the cashews till they are golden brown and set aside.
In the same pan, fry the peanuts till they are golden brown and set aside.
Heat some more oil in the pan, add the mustard seeds and allow to splutter.
Add the urad dhal, channa dhal, red chillies, curry leaves and the the grated coconut.
Fry for few minutes and add this to the rice.
Add salt as per taste and fold the rice slowly so it doesn't break.
Add the fried cashews and peanuts and serve.
