Chakkara(Sweet) Pongal

Chakkara Pongal is a sweet delicacy  made in South India during the Pongal festival. It is rice and dhal cooked in jaggery and milk and flavored with nuts.

Serves 2
Ingredients Required:
Rice - 1 Cup
Moong Dhal - 1/2 cup
Jaggery - 2 Cups (or more if you have a sweet tooth :) )
Milk - 2 Cup
Water - 2 1/2 cups
Cardamom - 1 tsp
Cashews - 10, broken
Raisins - 10

How to make?
Heat little ghee in a pan and fry the rice and dhal for few seconds on low heat. 
Pressure cook the fried rice and dhal along with 2 cups milk and 2 1/2 cups water.
Boil 1/4 cup water and add the jaggery in a vessel so the jaggery dissolves in water. Filter the jaggery water and set aside.
Heat little ghee in the same pan and fry the cashews till they are golden in color and set aside. Then fry the raisins for few seconds and set aside.
Mash teh cooked rice and dhal and set aside. If milk has boiled and overflowed in the pressure cooker, add that milk also in the pan and mash well.
Take a large pan, and add the filtered jaggery syrup. Bring it to boil, till a one string consistency is formed. 
Add the mashed rice and dhal mixture to the jaggery and mix well.
If the the mixture is very diluted, then close the pan and heat on low heat for few minutes and it would thicken.
Add the powdered cardamom to the mixture and mix well. 
Add as much as ghee you want to the pongal. More the ghee more delicious it would taste.
Garnish with fried cashews and raisins and serve hot.
