Baked Stuffed Okra

Ingredients Required:
Okra - 20
Salt to taste
Oil/Cooking oil spray

To roast and grind:
Cumin Seeds - 1 tsp
Coriander Seeds - 1 tsp
Peanuts - 2 tbl.spn
Grated Coconut - 1 tbl.spn

For the filling:
Oil - 1 tsp
Onions - 1, Chopped
Turmeric Powder - 1 tsp
Chilli Powder - 1 tsp
Salt to taste

How to Make?
Slit the Okras to make pockets but not all the way through and set aside.
In a pan, add all the ingredients under the 'Roast and Grind' and dry roast them. Grind to powder after they have cooled down.
In the same pan, add a little oil and add the chopped onion and saute till golden brown.
Add the turmeric powder, chilli powder and salt.
To this, add the ground powder and mix well. Set aside.
Fill the pockets of the okras with this masala filling.
Place the okras on a baking tray and spray the cooking oil over them.
Preheat the oven to 400 degrees and place the tray inside.
Let it bake for 10 minutes and carefully turn the okras to bake on the other side.
Serve hot.
