Carrot Kheer

Carrot Kheer is my all time favorite dessert. Can have it anytime :) It is healthy and tasty at the same time. And most of all it is so easy to make !






Serves - 4


Ingredients Required:
Baby Carrot - 1 Cup, Shredded
Baby Carrot - 5 (for grinding)
Sugar - 2/3 Cup
Milk - 4 Cups
Cardamon - 1 tsp
Saffron - pinch (optional)
Ghee - 1 tbl.sp
Badam -10
Cashew - 5


How to make?
Heat ghee in a pan and add the shredded carrots.
Cook for a minute and add 1/4 cup of water and close the lid. Let it cook for 5 minutes on low heat.
Soak 5 badam and cashews in water for 10 minutes and grind with some milk and the remaining baby carrots.
Add this mixture to the carrot along with milk, sugar and cardamon.

Let this cook for 30 minutes on low heat.
Add a pinch of saffron.
Slice the remaining badam roughly and garnish on top while serving
Serve hot or cold.



Notes:
Saffron is optional and can also be skipped. It just enhances the flavor and  taste.
More sugar can be added if you have a sweet tooth.
I usually grind some carrot and add the paste, so more flavor blends in the kheer and also the color would be light orange.
