Sweet Corn Rice

 Serves 2

Ingredients Required:
Rice - 1 Cup
Sweet Corn - 1 Cup
Green Chillies - 2 , chopped
Ginger Paste - 1 tsp
Cloves - 2
Cinnamon stick - 1
Bay leaves - 2
Cashewnuts - 10
Garam Masala - 1 tsp
Dry Mango Powder - 1 tsp
Turmeric Powder - 1 tsp
Onion - 1 , chopped lengthwise
Salt as required
How to make?
Pressure cook the rice with 1.5 cups of water for 3 whistles in a pressure cooker.
Cool the rice.
Heat a little oil in a pan and fry the cloves, bay leaves, onion and  ginger paste for few minutes.
Add the sweet corn, salt and cook for 3 minutes.
Add garam masala, turmeric powder and dry mango powder and cook for a minute.
Add the rice and fold without breaking the rice so that the paste mixes well with the rice.
Cook for a minute.
Fry the cashews in ghee and garnish.
Serve with curd/raita.
