Rice - 1/4 cup
Whole milk - 4 cups
Sugar - 1/4 cup
Saffron - 6 strands
Crushed cardamom - pinch
Butter/Ghee - 1 tbl.sp
How to make?
Wash the rice.
Melt the butter/Ghee in a non stick frying pan and add the rice. Fry for couple of minutes.
Add two cups milk and sugar and cook till the rice becomes tender.
Grind the whole almonds and cashews along with some milk in a blender.
Add this paste to the Kheer.
Add the remaining milk and allow to cook for some more time.
Garnish with sliced almonds, sliced pistachios, Raisins and saffron.
The kheer would thicken as it cools down.
Serve the Kheer warm or cold.
I like it when it is cold :)
