Sooji Dhokla

Serves 2
Ingredients Required:
Sooji/Rava - 1 Cup
Curd - 1 Cup
Water - 1/4 Cup
Salt to taste
Lemon Juice - 2 Tsp
Turmeric Powder - pinch
Chopped Green Chilli - 1
Chopped Cilantro - 2 Tsp
Oil - 2 tsp
Eno Salt - 1 Tsp

For Seasoning:
Mustard Seeds - 1 Tsp
Curry leaves - 1 Twig
Pinch of hing

How to Make?
In a bowl, take the rava and pour the oil over it. Mix it well with hand such that the rava is coated with oil.
In another small bowl take the curd, salt, turmeric powder, chopped cilantro, lemon juice, and the chopped green chilli. Mix well to a smooth mixture.
Pour this over the rava and mix well.
Add little water as required to bring it to a idly batter consistency.
Allow the batter to rest for an hour.
Add Eno salt to the batter and mix well.
Grease a pan with oil.
Pour the batter in the greased pan and steam cook for 10 min in a cooker.
Remove the pan from the cooker.
Heat oil in a small pan and add mustard seeds, pinch of Hing and curry leaves.
Season the Dhokla.
Cut it into diagonal shapes and serve hot with Chutney of your choice.
Best goes with Mint or Coriander Chutney.
